Strawberry Coconut Ice Pops

Summer is almost here!  The number one request from my kids is always, "Ice pops, please!"  Making our own is healthier and tons of fun.  A few simple ingredients in the blender, some time in the freezer, and poof...they are ready to devour.  The kids enjoy helping in the kitchen and of course love the finished product!

If you haven't tried your own ice pops yet, it is so simple!  All you need are 4 ingredients and an ice pop mold.  If you don't have an ice pop mold, you can always use some small paper cups and popsicle sticks.

We use coconut milk for our ice pops because it is so deliciously creamy!  You could also substitute with soy milk, almond milk, or yogurt.  Throw all 4 ingredients in the blender and hit puree until everything is evenly blended.  Once your ice pop mix is ready, just pour it into the ice pop molds.  Be sure to leave a little space as the mixture will expand when frozen.  Insert your popsicle sticks, and put in the freezer.  Ours were ready in just 6 hours.

STRAWBERRY COCONUT ICE POPS RECIPE
*makes 6 pops
Ingredients:
1 can of coconut milk (13.5 oz)
2 cups of fresh strawberries
2 Tbs. Maple Syrup
1/4 teaspoon vanilla
1.  Mix all ingredients in a blender
2.  Pour mixture into ice pop molds.  Leave room in each mold so it can expand in the freezer without overflowing.
3.  Freeze for 6 or more hours.
4.  Run briefly under hot water to release the pop from the mold.
5.  Enjoy!
